Family Dinner Reinvented: Quick, Cheesy, and Utterly Delicious Ziti

With a schedule that barely leaves time to breathe, bonus points go to meals that can be doubled or frozen for a later day. Pasta nights are a regular occurrence in our house—so much so that even our dedicated carb enthusiasts can sometimes roll their eyes. To keep everyone from growing tired of the same old spaghetti, I introduce ziti into our rotation every fourth meal. It’s a clever twist that keeps both kids and adults happily satisfied.

Not So IttyBitty Ziti

Ingredients

1⁄2 lb your favorite pasta
16 ounces ricotta cheese
3 cups grated mozzarella cheese
3 cups spaghetti sauce
1⁄2 cup grated parmesan cheese
Optional: 1 lb ground beef (seasoned to your liking)

Note for the Lactose Intolerant

For any of my readers who are lactose intolerant, I’ve perfected a version using dairy-free products.

The result?
Just as delicious and a perfect alternative for those who need it.

Directions

1. Preheat your oven to 350°F. If using ground beef, cook it in a pan, season as desired, and once fully cooked, drain the fat. Allow the meat to cool slightly.

2. Follow the package instructions to boil the pasta. Drain and transfer to a large mixing bowl.

3. Combine the cooled ground beef (if using) with the pasta. Add all the ricotta cheese and half of the mozzarella cheese, mixing thoroughly to ensure every piece is coated with cheesy goodness.

4. Spray a 13×9-inch baking pan with nonstick cooking spray. Start by spreading about half of the spaghetti sauce evenly on the bottom. Next, add your pasta/cheese mixture and then drizzle the remaining sauce over the top.

5. Sprinkle the grated parmesan cheese across the dish, then top it all off with the remaining mozzarella cheese.

6. Place the pan in the oven and bake for 20-30 minutes. Look for the cheese to be melted and lightly golden – a sign that it’s ready to serve.

(If using dairy free alternatives, be advised the cheese on top won’t ever get a melty appearance. I cook my ziti for 25 minutes when using alternatives and it comes out great.)
